Kimchi Rice Bowl
I love kimchi and this is a really simple rice bowl that I ate for lunch last week. Kimchi is a spicy fermented cabbage often used in Korean cuisine as a side dish or ingredient in soups, stews and noodle dishes. I added hard boiled eggs but you could use any protein you like. Cucumbers add crunch and balance out the spicyness. You can add things like roasted mushrooms, avocado or any season vegetable that you like.
Ingredients:
Cooked white rice, as much or little as you like
2 hard boiled eggs, quartered
A handful of kimchi
Half a cucumber, sliced into coins
Chopped chives, to garnish
Sriracha, optional
